turkey chili recipe1 pound ground turkey

1 cup diced onions

1 tablespoon minced fresh garlic

1 red diced red pepper

½ cup diced celery

1 jalapeno, seeded and deveined, minced (more or less to taste)

1 teaspoon oregano

½ – 1 bay leaf

2 tablespoons chili powder

1 teaspoon cumin

6 – 8 oz fire roasted tomatoes

Chicken stock/broth

1 cup beans (kidney, black, cannellini, pinto)

If beans are dried, cook in pressure cooking according to appliance instructions. (No need if canned) sauté turkey until lightly browned, add onions, garlic, red pepper, celery, jalapeno, oregano, bay leaf, chili powder, and cumin. Stir well and heat until onions are softened and fragrant. Add tomato and chicken stock until desired consistency. Add salt and pepper to taste. Bring to a boil then reduce heat and simmer. Add cooked beans and simmer ten more minutes.
